- ¾ cup dried quinoa
- 2 – 3 cups fresh strawberries, sliced
- 1 – 2 cups fresh blackberries
- 3 apricots, pitted and sliced
- 1 – 2 tbsp. fresh mint, chopped
- 3 tbsp. honey
- 1 tsp. balsamic vinegar
- 1 tbsp. fresh lime juice
- Pinch of salt
- ½ cup chopped candied or raw almonds
Add quinoa and water to a medium saucepan and bring to a boil over medium heat. Boil for 5 minutes. Turn the heat to low and simmer for about 15 minutes, or until water is absorbed. Remove from heat and fluff with a fork. Let quinoa cool to room temperature.
Chop the fruit and place in a large bowl with chopped mint.
Coarsely chop almonds in a food processor or plastic bag.
Mix the honey, balsamic vinegar, lime juice and salt in a small bowl.
Combine cooled quinoa with fruit. Pour in the honey mixture. Sprinkle with candied almonds.
