Fresh Recipe: Fava Bean and Potato Pesto Salad

  • ¼ cup parmarono, finely grated
  • ½ bunch green onion sliced
  • 1 ½ cup basil leaves
  • 1 ½ cup mint leaves
  • ½ cup extra virgin olive oil
  • 1 pound diced and boiled new potatoes
  • 2 cups blanched fava beans
  • Salt and pepper
  • Zest of 1 lemon

In a mortar combine the basil, mint and green onion with a pinch of salt. Pound until it is a nice fine consistency. Place herb/onion mixture in a small mixing bowl and add the cheese and the olive oil. Season the mixture with more salt, some black pepper and the zest of 1 lemon. In a separate bowl combine the fava beans with the potatoes, slowly add the pesto until the salad is well dressed, serve room temperature.
