Fresh Recipe: Soft Ripened Goat Cheese Crostini with Lettuce and Dried Plum Vinaigrette

  • soft ripened goat cheese
  • 1 cup dried plums
  • ½ cup sherry vinegar
  • ½ cup Extra Virgin Olive Oil
  • 1 shallot/spring onion/green garlic (2 tablespoons), minced
  • 2 each star anise
  • ½ teaspoon clove
  • 1 tablespoon toasted coriander

Place the shallot in a small bowl and barely cover with sherry vinegar. Bring about 2 cups of water to a boil and then remove the pan from heat, add the plums, let soak for 5-10 minutes, until plump and tender.   Place all of the spices in a spice grinder and grind until fine. Drain off the plums reserving the cooking liquid and place the plums in a food processor/blender, add ¼ cup cooking liquid and blend until it is a smooth consistency. Add the sherry vinegar, add another ¼ cup of the cooking liquid, shallot and the spices, blend until combined. In a slow dribble add the olive oil to the plum mixture while blending, season with salt and crushed red pepper.
